Spicy
Spinach with Yoghurt
20 spinach leaves
30g ghee
2 tsp black mustard seeds
1/4 tsp fengreek seeds
1/2 tsp ground cumin
1/2 tsp ground nutmeg
1/4 tsp chilli powder
1 Tbs brown sugar
500g plain yoghurt
Remove stalks from
spinach. Steam or microwave spinach until soft, drain,
cool, chop finely. Melt ghee in a medium saucepan, stir
in seeds, cumin, nutmeg, chilli powder and sugar. Stir
over medium heat for about 20 minutes or until mustard
seeds begin to pop. Stir yoghurt and spinach over low
heat for about 1 minute, just till heated through.
